Use the NPC editor to change its appearance, equipment and behaviour. You can open it from All NPCs, or turn on edit mode to select NPCs in the world.
/npc editWith edit mode on, right-clicking or punching an NPC opens its GUI instead of hitting it. Run it again to turn it off. It turns off when you log out too.
You can also skip edit mode entirely. Open /npc, All NPCs, click the head.
Settings

Protected blocks everything
Protected stops all damage, fall, fire, mobs, the lot. If you want something that can be hit but never dies, that's Immortal.
Actions
Rename, change skin, randomise (new name and skin), teleport it to you, apply a kit, copy your own potion effects onto it, put it in a group, and the Action Intervals menu.

Names
Names take & colour codes when you set them by hand. The limit is 16 characters including the codes, that's a Minecraft thing. &c&lBob uses seven characters, including the colour and formatting codes.
Action intervals
Repeating left-click (swing), right-click (use) and jump. Each has three modes:

Equipment
Drop items into the helmet, chestplate, leggings, boots, main hand and off hand slots. Or Apply Kit to dress it from a saved kit in one go.
Locator bar
/npc locatorbar [name]
/npc locatorbarall <on|off> [near]Controls whether the NPC appears on the locator bar. There's a toggle in the editor too; this needs locator-bar support from the server and client.
Skins
Change Skin in the GUI for one NPC, Randomize for a new random name and skin together. One skin on every NPC is in Mass actions.
